The Keto Experience: Start Here

Eggs make the world go 'round

We have been trying out the Keto diet for a little while and the results have been phenomenal! It's definitely a life choice kind of change. You can't just wake up and decide to be Keto today and forget about it tomorrow. It requires a commitment to see results. Forget about cheat days, and make a serious choice to lose weight or get on a path towards better health. Here's the best way to start a keto diet in my opinion and my go-to meal.

Like with every new thing you do to your body, it's always good to start with a cleanse. With Keto, I like to do a 3 day cleanse with a simple keto friendly diet to start. My cleanse includes:
  1. An Infused Water Cleanse
  2. Removing ALL other beverages for 3 days
  3. Keto Basic Diet

My Infused Water:

A lemon water cleanse is always a good start to a diet, or any cleanse. But for me, it's SO bitter. I SERIOUSLY can't stand it without some honey or sugar or something. So, to make up for that, my Infused water includes Lemon, Cucumber, Blackberries, and Strawberries. We aren't counting carbs in this phase, so feel free to change up the amounts to taste, but don't add any sugar or honey.
  • 1/4 cup Strawberries cleaned and sliced
  • 2 tablespoon cut Blackberries
  • 1/2 lemon
  • 1/2 small cucumber
  • 96 oz of water (almost a gallon)
Put all of these in a gallon size pitcher and let it chill overnight. Don't re-use the fruit,  cut fresh ones each night. If you happen to finish the 96 oz long before the day is over, just switch over to regular water and make a batch for the next day early. It's super important you drink all 96 oz every day. I take these in small 12 oz batches that I can carry around in my super cute tumbler instead of carrying around a gallon all day long.

The Purge:

You can't drink anything else while doing your 3-day cleanse. I know morning coffee or tea is a hard one to skip, but it's only 3 days! You got this. I am a coffee addict. I can not deal with the world before my morning coffee, so this is rough on me too but it is always worth it in the long run. Remember that you are changing your diet for YOU. That skipping your morning coffee and changing up your routine is the best thing for you in the long run, not just what will make you happy today. Instant gratification is a KILLER, but trust me, we will get through this! (If this seems way hard, PLEASE feel free to slide in my DMs on any of my social media channels and I'll be happy to hit you with a one-two punch of "you got this")

Easy Keto Basic

Eggs! Hard-boiled eggs, Scrambled eggs, Fried Eggs, Omelette, Frittatas, however you like 'em...this is what we are eating for 3 whole days! On the night before I start the cleanse, I like to simplify my next 3 days and hard boil about a half a dozen eggs because I WILL eat them randomly throughout my next few days. I use the next 6 to make what I call "egg muffins" with keto friendly insides. Get out your cupcake pan sprayed with nonstick cooking spray and add your keto friendly ingredients:
  • Bell Peppers
  • Jalapeno
  • Bacon - cook before adding to cups
  • Sausage - cook before adding to cups
  • Avocado
  • Spinach
  • Broccoli
And load up your cups. Fill each cup about halfway to 3/4 full as they will rise in the oven. I bake for 20-25 minutes at 375.

For my sides, I keep it veggie based. Cauliflower (riced), Broccoli, a half of avocado, zucchini, spinach, any keto friendly vegetable. I keep it simple and typically stick to Cauliflour, Broccoli and Avocado for the first 3 days.

Final tip

Do not starve yourself. If you are hungry, EAT. Keep an extra couple hard boiled eggs or egg cup on you to prevent random hunger binge eats. Celery is a great snack, so is some cherry tomatoes, cucumber, and pickles. Keep it simple, and keep lots of food close to prevent binging. Adding as many raw vegetables as you can to your diet is a huge bonus to your health too!

Vegas Bound: Christmas In Vegas 2019

Christmas in Las Vegas is really SUCH a magical thing. The Las Vegas strip sprinkles a little bit of holiday magic all over EVERYTHING, and it is so beautiful! All of our usual attractions, like the Bellagio Fountain bring the Christmas cheer with holiday music playing this season. I'd LOVE for the world to start looking at Vegas during the Holiday season, so here's a couple of things to be aware of, what's going on and my recommendations. SO, Vegas is not really less busy during the Holiday Season.  So don’t expect any holiday discounts or extra space it will be the general amount of crowded...if not a bit more! Buffets and full course meal/dine-in options are going to be a little more expensive b/c they are going to be WAY more decked out than usual. It’s cold as all hell here to me right now it’s like in the 50s all week so bundle up for that. But there are SO many things happening, most things are going to be open and at its usual hours except for like our l...

Why I Meditate

I love meditation. My life has totally turned around since I started taking time to be still and turn inward instead of always focusing so hard outward. There's no pressure to meditation, you can meditate for as long or as quickly as you'd like. You have no one to be accountable to, no one to impress, nothing to do but focus on yourself and take a moment for self-care. I started meditating probably about 9 years ago (don't do that math), but I didn't start doing it regularly until the last 3 years. It gives me the time to STOP reflecting on the day, stop thinking back on things I could have done differently, stop planning for the future and just be present. I practice some different energy healing modalities such as Reiki & the Seraphim Blueprint and use crystals and anything else that vibes with me to get in the zone. When I first started, I loved using guided meditations to "clear my chakras" or just talk me through relaxation and give my ...

WINTER Specifically, January 11th - 17th is a great time to get here. We just went through the craziness of the New Year and the holidays so we are kind of in a "settle down" phase and things aren't as crowded or surge priced. Here are a few things to do outside of clubbing, shows...

Nikki On Vegas: The New Launch

Welcome to the new Nikki On Vegas Blog. I've had some huge changes in my life in the past year and a half that I needed to reflect into my online presence. The New New   Get a similar sweater dress here. Size up for maternity. About a year and a half ago, I was blogging regularly, all over social media and completely content to keep blogging specifically about Vegas and helping people have their best vacations ever. Then I got pregnant! I had a super difficult pregnancy and couldn't keep up with the lifestyle I had before at all. Since having my beautiful, amazing, miracle baby I realized that I have SO MUCH MORE that I want to talk about, share, and learn. It took me WAY too long to figure out how to do that and still provide the Vegas info, reviews, tips and tricks that I love so much. But! I'm back, the Vegas is still here, I've just expanded to much much more.  All of my social media will remain @NikkiOnVegas, so kee...
